For Thursday's dinner, this week, we chose Outback Steakhouse. Inclement weather, however, was in the forecast. If it had been raining, we'd have diverted to Chef Fred's, as they have a substantial overhang to keep the family dry.
This proved not to be necessary.

Troy, our server, shared a company secret. All sirloins are cooked 12 minutes. If you order a sirloin of a particular weight cooked rare, they give you a thicker one, of that weight.
If you order well done, it's thinner, but of the weight you ordered.
The science is in the cutting, not the cooking --- ingenious!
