Outback Steakhouse (Chef Fred's)

For Thursday's dinner, this week, we chose Outback Steakhouse. Inclement weather, however, was in the forecast. If it had been raining, we'd have diverted to Chef Fred's, as they have a substantial overhang to keep the family dry. This proved not to be necessary.

Troy, our server, shared a company secret. All sirloins are cooked 12 minutes. If you order a sirloin of a particular weight cooked rare, they give you a thicker one, of that weight. If you order well done, it's thinner, but of the weight you ordered. The science is in the cutting, not the cooking --- ingenious!
