ROAST BEEF-BLUE CHEESE SALAD  
This first came from Southern Living Complete Quick and Easy Cookbook: 2009
Ingredients:
8 ounces thinly sliced roast beef
1 pint cherry tomatoes
8 ounces mixed salad greens
1/4 cup crumbled blue cheese or feta cheese
1/4 cup olive oil vinaigrette
Parmesan crisps
Procedures:
  1. ___Arrange roast beef slices into two stacks; roll up stacks. Cut into 1" slices. Arrange beef and tomatoes over salad greens. Sprinkle with blue cheese, and drizzle with olive oil vinaigrette. Serve with Parmesan Crisps.
Notes:
2011-01-09: We tried again, but it still needs work. Lyd thinks we need to use steak rather than left over roast beef. As before, the Parmesan Crisps were excellent.
2010-07-02: This had it's first try with just the two of us. It wasn't very good, but the Parmesan Crisps were excellent!
