Lemon Rice
This first came from Southern Living Complete Quick and Easy Cookbook: 2009.
1 part uncooked long-grain rice [i.e. 1 cup]
1.5 parts liquid [i.e. 1 cup chicken stock and .5 cup water]
1 t vegetable oil
1 t lemon juice
Note: The quantities are not critical as long as the ratio is followed.
Bring the rice, water, juice and oil to a boil.
Cover, reduce heat, and simmer 15 minutes or until rice is tender.
Remove from heat, and let stand 10 minutes. Fluff with a fork.
2018-06-04: not rinsed. 1 teaspoonful lemon juice; 1 cup chicken stock [increase lemon juice]
