Elaine's Grandmother's Tomatoes
From the kitchen of Elaine Laws
Ingredients:
1 28 oz can Hunts Petit Diced Tomatoes
1 cup sugar
3-4 slices bread, torn
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2-3 Tablespoons Butter, cut into pieces and put over top
A little heat?
Procedures:
Combine all ingredients
Bake at 350o for about 1 hour.
Notes:
2023-10-10: Made for Bill’s visit.
2023-01-29: Two pints were made from roasted Campari tomatoes, and sent to the freezer.
2022-10-02: A batch was made from 5 cups of previously roasted Campari tomatoes, and served with a quiche.
2021-09-13: instead of canned tomatoes, we used 5 containers of roasted Campari tomatoes, sending three pints to the freezer.
2009-01-25: Added to our cookbook.
