LIMONCELLO
An after dinner drink of lemon and vodka, this was served to us at Citricos at Walt Disney World. This recipe was a summary of several.
Ingredients:
Full Batch
10 lemons
1 (750-ml) bottle vodka
3 1/2 cups water
2 1/2 cups sugar
Half Batch
5 lemons
375 ml vodka
1.75 cups water
1.25 cups sugar
Procedures:
Using a vegetable peeler, remove the peel from the lemons in long strips (reserve the lemons for another use).
Using a small sharp knife, trim away the white pith from the lemon peels; discard the pith.
Place the lemon peels in a 2-quart pitcher, add the vodka and cover with plastic wrap.
Steep the lemon peels in the vodka for 4 days at room temperature.
Stir the water and sugar in a large saucepan over medium heat until the sugar dissolves, about 5 minutes.
Cool completely. Pour the sugar syrup over the vodka mixture.
Cover and let stand at room temperature overnight.
Strain the limoncello through a mesh strainer. Discard the peels. Transfer the limoncello to bottles.
Seal the bottles and refrigerate until cold, at least 4 hours.
750ml=~25oz; Sugar Water=~28oz yields ~54 oz yields ~9 oz in 6 cruets.
Notes:
2019-11-03: 6 cruets were bottled and refrigerated.
2016-03-21: 6 cruets were bottled and refrigerated.
2015-07-13: Six 9oz cruets were placed in the dungeon fridge.
2014-01-14: One bottle and 2 cruets.
2013-10-22: A half-batch was finished and bottled. The decanter was flawed and broke, so we bottled into two Good Seasons cruets, taking one of them to Wyomissing for the kids.
