Elaine Laws Corn Bread  
From the kitchen of Elaine Laws.
Ingredients:
2 Cups corn meal
1/2 Cup flour
1 Cup sugar
1 Teaspoon salt
3 cups boiling water
1 stick of butter, softened
3 eggs, beaten
1.5 cups Evaporated Milk
Procedures:
Stir first four ingredients together in large bowl.
Add the boiling water and butter to dry ingredients.
Stir.
Add the eggs and evaporated milk.
Beat with mixer till well blended.
Pour into greased glass dish; 8x8 pan is good.
Bake at 375o for 1 hour.
Notes:
2022-07-13: Two dozen squares for the garage freezer and future use.
2021-12-24: Made for Sunday’s Laws’ Breakfast.
2020-12-21: Including 3/4 cup of toasted sugar, a batch was made for the Laws’ Christmas Breakfast.
2020-08-09: An excellent batch with 14 squares individually frozen into the kitchen freezer.
