BUTTER SQUARES
Makes 12 Cookies
Ingredients:
1/2 cup unsalted butter
3 T unsalted butter (Divided Use)
1 Cup flour
1 t Rapid-rise yeast (1/2 of a 1/4 oz envelope)
1/4 Cup Milk
6 t Sugar
1 egg, beaten
sugar for dusting
Procedures:
Mix butter and flour as for a pie, to form large crumbs.
Dissolve yeast in warm (120o) milk.
Add to the butter and flour mixture.
Mix together to form dough.
Turn out onto floured surface and roll dough to 1/8" thickness.
Cut into 3" x 3" squares.
Transfer squares to a parchment-lined baking sheet.
In the center of each square, put 1/2 t sugar and 1/2 t butter.
Fold in corners and seal gently with fingers.
Let stand for ~an hour, to rise.
Brush each square with egg and sprinkle with sugar.
Bake in a pre-heated 400o oven for 10-12 minutes or until golden brown.
Notes:
2009-04-09: On this 1st attempt, Lyd put Vanilla Sugar on the top of half the cookies. They needed salt, so we'll add 1/2 teaspoon each of salt and vanilla and use Splenda instead of the vanilla sugar.
