DAIQUIRI PIE 
 
Ingredients:
1 4 oz Lemon Jell-o Pudding and Pie Filling
1 3 oz Lime Jell-o
1/3 Cup Sugar
2.5 Cups Water
2 eggs, slightly beaten
1/2 Cup Rum
2 Cups Cool Whip
1 9" pie shell
Procedures:
Mix pudding, Jell-o and sugar in a sauce pan.
Sir in 1/2 cup water and eggs.
Blend well.
Add remaining water.
Cook to a full boil.
Remove from heat. Stir in rum.
Chill about 1.5 hours.
Blend mixture into cool whip and spoon into crust.
Chill until firm.
Notes:
2020-09-20: This did not work well. With no lime jello, I substituted pistachio jello and the crust I bought was too small. Though the flavor was good, it never “firmed-up.” The plan is to freeze it and then cut it into separate pieces, individually containerized.
2011-08-31: This will get it's first trial with Bill and Cindy.
