Gingerbread Men
Gingerbread Men Recipe (from Jerry’s grandmother Mabel Riley Hastings)
Jerry writes: "We cook 3-4 batches of these every year at Christmas, giving some of them to friends and co-workers, and it's the only kind of cookie we do make for the holidays. Somehow, they never are quite as good as I remember them from my grandmother's kitchen in Delmar, Del., when I was young. Julia used to invite some of her friends over when we were making them to help decorate cookies with store-bought icing that we use, and they had fun with it. My grandmother made her own white icing, but I've never done that."
Ingredients:
˝ cup butter, softened
˝ cup sugar
˝ cup molasses
1 egg
2 ˝ cups sifted flour
˝ teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ginger
1 teaspoon cloves
1 teaspoon cinnamon
˝ teaspoon nutmeg
Procedures:
Cream together butter, sugar, and molasses. Add egg and mix well. Sift together flour, soda, baking powder, and spices. Add to molasses mixture and mix well. Chill in refrigerator for 1 ˝ hours at least.
Roll out on lightly floured pastry cloth or board. Cut with cookie cutters. Press in bits of raisins for eyes, buttons, etc. Place on ungreased baking pan.
Bake at 350 degrees for 10-12 minutes. Cool. Decorate. Enjoy.
