AMISH FRIENDSHIP BREAD STARTER MAINTENANCE
Though called a bread, this is more of a pound cake; a dessert. Kate brought the bread recipe, and a batch of starter, on the 2009 Labor Day weekend. If you don't have any starter, you're finished. If you do, you may already know how to maintain the starter. Do not use any metal spoon or bowl.
Ingredients:
1 cup of starter in a one gallon Ziploc Bag
2.5 cups flour, divided
2.5 cups 1/2 & 1/2, divided
2.5 cups sugar, divided
Procedures:
_____ Day 1 - do nothing (this is the date marked on the bag.)
_____ Day 2 - Mush the Bag and expel the air
_____ Day 3 - Mush the Bag and expel the air
_____ Day 4 - Mush the Bag and expel the air
_____ Day 5 - Mush the Bag and expel the air
_____ Day 6 - Add to the bag: 1 cup flour, 1 cup 1/2 & 1/2, 1 cup sugar, then mush the Bag and expel the air
_____ Day 7 - Mush the Bag and expel the air
_____ Day 8 - Mush the Bag and expel the air
_____ Day 9 - Mush the Bag and expel the air
_____ Day 10 - Baking Day:
  • Pour the big bag into a non-metal bowl.

  • For 4 bags and a baking quantity:
    • Add 1.5 cups each of flour, sugar, and 1/2 & 1/2 and stir to blend.
    • Pour one cup, each, of the mixture into 4 separate one-gallon Ziploc bags and date each bag as Day 1 with the current date. Set aside.
    For 1 bag and a baking quantity:
    • Discard 1/2 of the contents of the bowl.
    • Add .5 cups each of flour, sugar, and 1/2 & 1/2 and stir to blend.
    • Pour one cup of the mixture into a separate one-gallon Ziploc bag and date the bag as Day 1 with the current date. Set aside.

Notes:
2009-09-24: Day 10 we discarded much of the batter and save only one bag and baked the remainder as Lemon.
2009-09-14: Day 10 used 1/2 & 1/2 instead of milk. Mitosis: bags to: 1) us, 2) Dr. Barbara and 3) her daughter, Kelly. The baking was chocolate.
2009-09-04: Kate brought a bag of starter, on its 9th day. The next day, she and Lyd did the 10th day activity and baking of vanilla.
