Cut-Out Sugar Cookies {Shortbread}
Ingredients:
2 sticks unsalted butter, softened
2 ounces cream cheese, softened
1 cup sugar
1 egg
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 teaspoon lemon zest
3 cups all purpose flour
1.5 teasoons baking powder
1/2 teaspoon salt
Procedures:
With a mixer, beat the butter, cream cheese and sugar on medium speed for several minutes until light and fluffy. Beat in the egg, vanilla and almond extracts, and lemon zest.
Whisk the flour, baking powder and salt together and, at low speed, gradually add to the butter/sugar mixture and beat untill fully incorporated and a soft dough is formed.
Dough can, and should be, chilled or frozen
Divide the dough into 2 balls and roll out to 1/8" to 1/4" thickness between parchment paper sheets. Chill for at least an hour.
Cut the cookies onto a parchment paper-lined baking sheet, Bake at 350o for 8-12 minutes 17 minutes. Cool on the baking sheet for 5 minutes before transferring to cooling racks. Cool completely before icing/decorating
