Surprise Cookies |

This comes from Margaret's cookie recipe box; adapted from a recipe of Ann Hancock. |

Ingredients: |
2 egg whites
1/8 teaspoon salt
1/8 teaspoon Cream of Tarter
1 teaspoon vanilla
3/4 cup sugar
4oz chocolate chips
1/4 cup chopped Black walnuts

Procedures: |
Whisk egg whites, salt, Cream of Tarter and vanilla together until soft peaks are shown.
Then add sugar slowly.
Beat until stiff peaks are shown. Then fold in chocolate bits and nuts.
Drop onto parchment paper-lined cookie sheet by teaspoonfuls.
Bake at 225o for one hour.
Turn off oven, but do not open door.
Leave in oven for a second hour.
Cool slightly and remove from paper carefully by inserting a knife under each meringue.
These don't do well in damp or humid conditions.

2023-12-22: 46 cookies on 2 trays
2022-12-19: Test bake at 225o for one hour turn off oven do not open door leave in oven for a second hour. 32 cookies turned out very well and we’ll use this new method.
2021-10-13: 2 trays, 34 cookies, 300 for 25 minutes. [Underdone? Cream of tartar old?]
2020-11-30: 3 trays for 52; 25 minutes at 300
