Beef Rib Roast
This comes from Bill Payne; dear friend and excellent cook.
2-3 rib roast
McCormick Prime Rib Spice
Horseradish sauce
Remove roast from frige an hour before roasting and rub with seasoning on all sides, and insert temperature probe.
Preheat oven to 475o. Roast uncovered, bone side down in a racked roasting pan for 5 minutes per pound.
Reduce temperature to 275o, and roast until the internal temp reaches 130-135o, about 2 hours.
Let the roast sit for ~15 minutes before carving, noting the temp will continue to rise ~5 degrees.
