BEEF TENDERLOIN Beef Tenderloin
This has many uses. We have served it as a featured party dish, with sauce and rolls. It is also excellent as a main course for a fancy dinner. It can be sliced cold into filet mignons.
The cut of meat is a beef tenderloin. We have paid as little as $10.49 or as much as $17.99 per pound. A full tenderloin is between 5-9 pounds, so it can run over $150 for a piece. There is little waste. This lean meat produces no gravy, but a little essence or Au Jus. This can be combined with sautéed mushrooms and sautéed onions for a side dish.
Ingredients:
1 whole beef tenderloin
EVOO
Salt
Pepper
Penzy's English Prime Rib Rub [optional]
etcetera [other spices you may enjoy]
Procedures:
Coat the meat with EVOO and the spices.
Roast at 325o until the meat reaches a temperature of 145o, about 2 hours.
For the fancy dinner:
Cover for 10 minutes and slice, warm, into 1/4" slices.
For the party:
Chill, slice thinly and arrange on a platter with a side basket of dinner rolls and a dish of creamy horseradish sauce.
