ELAINE'S BEEF BRISKET
Another goodie from Elaine Laws. She served it to the family and we begged for the recipe.
Ingredients:
4-5 lb. brisket
Garlic Salt
Black Pepper, Coarse
2 Tablespoons Penzy's BBQ of the Americas
1/3 cup Worcestershire Sauce
1/3 Cup Liquid Smoke
1/2 - 3/4 cup of BBQ Sauce
Procedures:
  1. Rub with garlic salt and coarse black pepper. Marinate in the Worcestershire and Liquid smoke for 24 hours in a Ziploc bag.
  2. Cook fat side up at 250o for 6-6.5 hours. Keep covered with foil while cooking. When done wrap meat and refrigerate.
  3. Put the marinade in a wide mouth container and refrigerate until the fat hardens. Spoon the fat off the top and discard.
  4. Slice the brisket very thinly across the grain when cooled thoroughly.
  5. Add the BBQ sauce to the marinade. Heat on the stove top until warm.
Notes:
2011-08-17: Very good; served with mashed potatoes and coleslaw.
