CHICKEN CHOW MEIN 2012-03-05
We used to make this for a neighbor whose wife was ill. Although we had several choices, this was his favorite.
Ingredients:
1 T Vegetable oil
1 Stalk celery
1 onion, chopped
1 bag slaw mix
3 Carrots, julienned
2.5 cups Chicken broth
3 T Soy Sauce
2 T cream sherry
dash Cayenne Pepper
1 t Ground Ginger
1 t Balsamic Vinegar
2 T Cornstarch
2 cups Cooked Chicken
2 cups Mushrooms
1 can water chestnuts
Procedures:
Sauté veggies in the oil
Combine broth, soy sauce, and cornstarch and stir well.
Add remaining ingredients and simmer until thickened.
Serve over fluffy white rice and/or Chinese noodles.
Notes:
2023-06-12: We used a breast and a pair of thighs, and added a few shrimp from the recent Fry Day. We forgot the ginger, but added a bottle of Saki.
2022-07-28: A good batch for dinner with 3 more quarts to the freezer.
2021-01-23: An excellent batch, served over rice, with 3 quarts to the freezer.
2019-11-04 A good batch for the two of us with more to the freezer.
2019-07-10: mixed chicken over chow mien noodles w/2 packs of mushrooms and a 19 Crimes Hard Chard.
