CRISPY HERB BAKED CHICKEN
This comes from the Red Book, a notebook of our recipes created in 1999, and only recently resurrected. Therefore, many of the recipes are listed as experimental.
1994-11-20: This recipe came from the Hungry Jack box.
Ingredients:
2/3 cup Hungry Jack Mashed Potato Flakes
1/3 cup grated Parmesan Cheese
1 teaspoon garlic salt
1 cup-up chicken, skinned
1/3 cup melted butter
Procedures:
Heat oven to 375o. Grease or line a baking pan with foil. In medium bowl, combine potato flakes, Parmesan cheese and garlic salt, stirring until well mixed. Dip chicken pieces into butter and roll in potato flake mixture to coat. Bake for 45-60 minutes or until chicken is tender and golden brown.
Notes:
2013-08-07: This didn't work well. I used chicken leg quarters and they were too big, and under done. Next time, we'll try skinless boneless breasts and cut them into strips. Some kind of a dipping sauce is indicated.
