Lemon Chicken Stir-fry
This first came from Southern Living Complete Quick and Easy Cookbook: 2009
Ingredients:
1/4 cup water
1/3 cup lemon juice
2 Tablespoons soy sauce
2 Tablespoons sugar
1 Tablespoon Corn Starch
1 Tablespoon minced garlic
1 Teaspoon sesame seeds
1 bunch green onions
1/2 onion, sliced
1 carrot
1 Orange/Yellow Pepper
1 chicken breast per person
2 Tablespoons Sesame Oil
S&P
Fluffy Rice
Procedures:
Combine the 1st 7 ingredients in a 1 cup measure. Set Aside.
Slice the scallions laterally and then cut into 1" pieces. Cut the carrot into match sticks. Slice the pepper and onion into strips
Slice the chicken breasts into strips
Heat oil in a large skillet over medium heat; add chicken, and stir-fry 3-4 minutes or until browned.
Add the vegetables to the chicken; cook, stirring often, 2-3 minutes or until vegetables are tender.
Stir in soy sauce mixture and sesame seeds, cook 2 minutes or until sauce begins to thicken.
Serve over pasta
Notes:
2023-10-22: Over rice with a bottle of Riesling.
2022-01-15: Two chicken breasts. Served over Asian noodles with an acorn squash.
2020-02-19: Using 2 chicken breasts, it was served over brown rice with a bottle of Fetzer Gerwertz.
2018-06-13: Using 2 thighs; served over fluffy rice with Spaghetti squash.
