Chicken Parmesan  
Parmesan Encrusted Tilapia is one of our favorite recipes from the kitchens of Olive Garden Restaurant. This first version is substituting chicken.
Ingredients:
2 boneless, skinless chicken breasts
1/2 cup Alfredo Sauce
3 ounces angel hair pasta
1 lemon, sliced into 6 wedges
1/4 cup Italian seasoned breadcrumbs
1/4 cup grated parmesan cheese
1 tablespoons vegetable oil
Roasted Veggies
Procedures:
Pound the chicken breasts until quite thin
Thoroughly mix the breadcrumbs, parmesan and oil, cover and refrigerate until ready to use.
Preheat oven to 450 degrees F.
Place chicken breasts in a non-stick, shallow, baking pan.
Pour 3 tablespoons of Alfredo sauce onto each breast. Use bottom of spoon to evenly coat top of breast.
Sprinkle 1/3 cup of prepared crusting mixture onto each piece and firmly pat breading evenly over Alfredo sauce.
Place pan of chicken on top rack and roast approximately 15 minutes.
Toss the vegetables with angel hair pasta (and extra Alfredo sauce if you like) and place around chicken.
Garnish with lemon wedges and serve immediately.
