ROAST CHICKEN |

Ingredients: |
1 7-8 lb Roaster Chicken (We like Purdue)
8 whole garlic cloves
1 Lemon, halved
1 teaspoon Rosemary
EVOO
1 pound of bacon

Procedures: |
Thaw completely; Use covered roasting pan; Spray with Pam.
Put the garlic cloves, lemon halves, and rosemary in the cavity.
Put chicken in pan and rub olive oil over bird; S and p.
Layer bacon slices over bird, including the legs.
Roast at 425o covered for 1 hour.
Uncover and roast at 350o for about 1.5 hours, total, or until temp of 165o is reached.
When done, leave in roasting pan on counter, covered for 15 min.
Carve.
Cover platter with foil.
Keep warm til ready to serve.
This lets all the last minute prep to be over before the dinner.
It was moist and tender.

Notes: |
2017-05-14: The chicken sat out for 1/2 hour before roasting and was placed breast side down and roasted for a total of 90 minutes.
