Chicken Salad |

Though called a salad, this is an entree; best in the summer.
In Lyd's youth this was often served, in the summer, to company, accompanied by sliced ham, aspic, and/or home-made rolls.

| Ingredients: |
4 cups mixed stewed chicken
celery, chopped
green grapes [optional]
almonds[optional]
|
mayo
Durkee Sauce
Pepper Relish
S&P

| Procedures: |
Mix the chicken and chopped celery in a bowl.
Mix the wet ingrediants in a separate bowl. Combine
Add grapes and almonds as desired.
Season to taste; light on the salt, heavy on the pepper.

2025-07-09: Served with mushroom-leek bread pudding and a bottle of Riesling.
2024-11-23: Using a pint of stewed chicken from the freezer.
2024-09-03: A good batch used mostly for lunches.
2024-07-14: Using a portion of Perdue stewed chicken and slivered almonds.
