Chicken Salad
Though called a salad, this is an entree; best in the summer. In Lyd's youth this was often served, in the summer, to company, accompanied by sliced ham, aspic, and/or home-made rolls.
Ingredients:
4 cups mixed stewed chicken
celery, chopped
green grapes [optional]
almonds[optional]
mayo
Durkee Sauce
Pepper Relish
S&P
Procedures:
Mix the chicken and chopped celery in a bowl.
Mix the wet ingrediants in a separate bowl. Combine
Add grapes and almonds as desired.
Season to taste; light on the salt, heavy on the pepper.
