CRAB CAKES
This is a Maryland Favorite. If made into smaller balls, they are crab balls and can be used as an hors-d'oeuvre.
Ingredients:
1 lb. Maryland Jumbo Lump Crab
1/2 Cup Mayonnaise
1 Egg, beaten
20 Saltine Crackers, crushed
1 T Worcestershire Sauce
1 t Old Bay
Dash Pepper
3 T Butter for frying
Procedures:
Combine the 1st 7 ingredients and shape into patties.
Fry under medium heat in the butter until golden brown, turning only once.
Do not over-mix. It is best to mix all the ingredients and then, gently, add the crab.
Notes:
2023-11-13: lunch.
2022-04-24: CRAB BALLS: Formed into ping-pong ball sized and put on a jelly roll pan; baked at 400 for 20 minutes to make ~30 balls.
2018-09-03: prepared for our Labor Day dinner and served with summer salad and sweet potato fries.
2017-01-07: Made as crab balls.
