CRAB CAKES - 8/8/09 Experiment Shown with Brocolli Salad
2009-08-08: Lyd's experimental crab cakes.
Ingredients:
1 lb. Maryland Jumbo Lump Backfin Crab
1/2 Cup Mayonnaise
1 Egg
Panko Bread Crumbs
1 T Vidalia Mustard
1 T Worcestershire Sauce
1 T Lemon Juice
1 t Old Bay
Dash Cayenne
Dash Salt
Dash Pepper
3 T Butter for frying
Procedures:
Combine the ingredients and shape into patties.
Fry under medium heat in the butter until golden brown, turning only once.
Notes:
Do not over-mix. It is best to mix all the ingredients and then, gently, add the crab.
