Crepes, Dinner  
Ingredients:
1 1/2 c half 'n half
2/3 c flour
1/2 t salt
3 eggs
Procedures:
Whisk all ingredients in large bowl and let stand for at least 2 hours so the flour can absorb the liquid.
Brush bottom of small (7-10") fry pan or crepe pan with butter.
Using medium heat, pour scant 1/4 cup batter into pan.
Swirl to coat bottom. Cook until the top loses shine. Flip and cook the other side about 1 min. Slide onto waxed paper and cool.
Crepes may be stacked with wax paper between them and frozen.
Notes:
2023-05-08: using the small Teflon pan, silicon brush and wax pepper on the island. Use the right front burner, with the small ring on medium. Use the soup ladle, 1/2 scoop of batter
2021-05-19: Use the right front burner w/o the protective ring and use only the inner burner on medium to make ~10 crepes. 4 were used for Bresovance and 6 to the freezer.
