Eggplant Parmesan
A Lydia Original recipe.
Ingredients:
1 eggplant
2 eggs
1 cup flour
2 cups Panko Italian bread crumbs
EVOO
Mozzarella cheese
Lyd's Red Sauce, or some jarred sauce.
Procedures:
NOTE: Next time, soak in brine and rinse and pat dry before frying.
Flour,egg,panko -> fry -> drain -> bake
1. Peel slice and sprinkle with salt refrigerator all day.
2. dip in egg then Italian breadcrumbs
3. Fry in EVOO till, brown but not done.
4. Refridgerate till final cooking.
5. Bake at 350 for 15 minutes
Notes:
2021-05-10: Sliced longitudinally; with regular bread crumbs, not Italian. Served with Romaine Splits.
2020-08-10: Served with broiled smoked sausages. The slices need to be cut thicker; not brined and baked on a cookie sheet.
2016-07-23: For the three of us with a tossed salad and a purchased bottle of Olive Garden dressing. Baked at 350 for 30 minutes.
