From Kate's kitchen, a family favorite
Ingredients:
3 stalks celery chopped
2 cans black eyed peas
1/2 onion, minced
1 cup water
1/4 lb chopped ham
handful chopped parsley
1 dash tabasco sauce
ground black pepper
rice
Procedures:
Sauté celery and onion in olive oil with pepper until brown (medium heat, 5-7 minutes).
Add water and Simmer ~3 minutes.
Add beans, ham, parsley, tabasco and heat through.
Notes:
2023-10-30: Served as a stand alone entree.
2021-03-27: Made with a portion of our free Easter ham. Next time, we’ll make a day ahead and use dried (cooked) blackeyed peas and add a can of black beans.
