Lamb Albondiga Citricos
With an assembly of recipes, we are attempting to replicate the Lamb Albondiga First Course served at Citricos at Walt Disney World.
Ingredients:
2Tablespoons Dried onion
1/4 cup heavy cream
3 cloves garlic
2 Tablespoons EVOO
2 egg yolks
1/2 teaspoons ground cinnamon
1 teaspoon ground cumin
pinch red pepper flakes
pinch Cayenne pepper
2 lbs ground lamb
S & P
1 cup fresh bread crumbs
1/4 cup dried parsley
2 teaspoons paprika
Feta cheese
Red Sauce
Procedures:
In a large bowl, mix together the onion, cream, garlic, egg yolks, cinnamon, cumin, red pepper and cayenne. Put the lamb in the bowl, and season it aggressively with salt and pepper. Add the bread crumbs and parsley, and combine the mixture well. Shape the meat into balls that are a little larger than golf balls. Sauté in EVOO until browned.
Pour the red sauce into a large baking dish that you can put on the table. Transfer the meatballs to the sauce, putting them about ˝ inch from each other. Simmer 1-2 hours.
Top with crumbled feta.
Notes:
2024-01-17: We made 17 large meatballs, enjoying 4, freezing 4 each in 3 batches, with the last one going to Holly.
2020-06-07: Browned and then baked for 30 minutes, making 12
2018-09-17: Using ground lamb, we made an excellent batch, served over pasta.
2017-05-22: minced onion replaced the diced onion and 2 whole eggs replaced the yolks. Garlic salt replaced the garlic and. The paprika was omitted. Yield=14 balls.
