Lobster Louie

Ingredients:
2 steamed lobsters, shelled, and chopped; about 1.5 cups
1 cup Mayo
1/2 cup Sour Cream
Cajun Mayo
1 teaspoon dill
1/4 cup seedless cucumber, diced
3 Tablespoons diced celery
3 Tablespoons diced scallions
Edamame
2 hard cooked eggs, chopped
1 teaspoon lemon juice
1 Avocado, sliced
1/2 teaspoon sugar
dash cayenne
4 Romaine leaves
Salt and pepper to taste
Procedures:
In a bowl, combine the lobster with the next 12 ingredients, mix well and chill for an hour or 2
Plate the Romaine leaves and lobster on top.
Garnish with avocado slices.
Notes:
2022-06-10: We used 2 tails and had some for the next day’s lunch.
2021-04-30: We used 2 tails and had some leftover for lunch the next day.
2018-07-14: An excellent batch for the 2 of us from one tail.
2018-05-04: made for the two of us with one steamed tail and reduced quantities of the other ingredients.
