Lobster Thermador
This recipe was pulled from the cookbook we bought in Booth Bay Harbor in 2022.
Ingredients:
1 Lobster Tail
3 Tablespoons flour
1 teaspoon salt
3 tablespoons butter
dash nutmeg
dash paprika
1 cup heavy cream
3 Tablespoons dry white wine
1/2 cup grated cheddar cheese
1 lemon [for garnish]
1 tablespoon stone ground mustard [optional]
Procedures:
Steam lobster tail for 20 minutes. Cool, shell, dice. Heat butter in a sauce pan. Whisk in flour, S&P & nutmeg. Heat, stirring, until bubbly. Whis in cream and wine. Add lobster meat and stir to coat. Spoon mixture into ramakins. Top with grated cheddar. Bake to brown cheese slightly. Garnish with lemon and parsely. Serve with white wine.
Notes:
2022-12-25: We used a pair of tails and served with a spinach salad.
2022-09-19: This worked well with just one tail. It was a bit wet from the oil in the cheese. We’ll use 2 tails next time.
