Our Best Meat Loaf |

|
Ingredients: |
3 tablespoons olive oil
2 onions, diced
8 oz. mushrooms, diced
Butter
1/2 t thyme
1 t garlic
2 carrots, diced
1 large zucchini, finely diced
1 red bell pepper, finely diced
1 yellow pepper, finely diced
1 Tablespoon garlic, diced
1/2 teaspoon red pepper flakes

Salt and freshly ground black pepper
2 large eggs, lightly beaten
1 tablespoon chopped fresh thyme
1/4 cup chopped fresh parsley
1 pound ground pork
1 pound ground beef chuck
1 cup Panko bread crumbs
1/2 cup freshly grated Parmesan
1 cup ketchup, divided
1/2 cup plus 2 tablespoons balsamic vinegar
1/3 cup Jack Daniels
1 Tablespoon Honey

Procedures: |
Dice all the veggies in a food processor, keeping the mushrooms separate.
Heat the oil in 2 large sauté pans over high heat.
Add the mushrooms to one pan and cook until done.
Add the other veggies, with salt and pepper, to taste, and red pepper flakes, and cook until soft, about 10 minutes, adding the garlic for the last 5 minutes, and reducing to nearly a paste.
Set aside to cool.
Whisk together the eggs and herbs in a large bowl. Add the meat, bread crumbs, cheese, 1/2 cup of the ketchup, 2 tablespoons of the balsamic vinegar, and the cooled vegetables and mushrooms and mix until just combined. Mold the meatloaf on a baking sheet lined with parchment paper into 2 loafs. They can be cooled for a few hours, if necessary.
Whisk together the remaining ketchup, Jack Daniels, honey, and balsamic vinegar in a small bowl. Brush the mixture over the entire loaf.
Bake the meatloaf at 400o for 1 to 1 1/4 hours. Remove from the oven and let rest for 10 minutes before slicing. |

Notes: |
2024-04-15: Served with Baked potatoes, 4 bean salad, and a bottle of Ricco Dolce.
2023-08-26: Lyd cooked the mushrooms with butter, 1/2 t thyme, & 1 t garlic. 10 slices went to the freezer.
2023-01-04: Another pair; 2 slices for dinner, with a baked potato and Brussels Sprouts, and the rest to the freezer.
2022-07-19: We made a pair to go to the freezer.
