CHEESY MEAT LOAF
 
Ingredients:
4 T EVOO
2 carrots, diced
2 celery stalks, diced
1 onion, diced
3 garlic cloves, minced
2.25 cups fresh bread crumbs
1 T + 1/4 cup fresh parsley
8 oz mozzarella, shredded
2 lbs. ground beef
2 eggs, lightly beaten
1/2 t minced dried thyme
Procedures:
Preheat oven to 350o.
Coat a jelly roll pan with 1 T oil.
Sauté carrots, celery and onion in EVOO for 8-10 minutes.
Add mushrooms and garlic and sauté 1 minute, covered, and reserve liquid. Cool 10 minutes.
In bowl, combine 1.5 cups bread crumbs and 1/2 cup mushroom liquid; soak 5 minutes.
In another bowl, combine 3/4 cup bread crumbs, 1 T parsley, 1 T oil, cheese and pepper.
In large bowl, mix beef, soaked crumbs, vegetable mixture, eggs, 1/4 cup parsley, thyme, salt and pepper.
Transfer to prepared pan; shape into 10" x 5" loaf. Cover top and sides with cheese-bread crumb mixture.
Bake to an internal temperature of 165o; about an hour and 10 minutes.
Notes:
2013-01-14: We made adjustments with interesting results.
2009-10-25: The mushrooms did not smell good and there was grit in the liquid which was strained out through paper towels. The mixture was dry and milk was added plus 2 T catsup.
