OYSTER POT PIE

I bought a pint of Chincoteague Oysters at Giant this morning. In the checkout line, Debbie suggested we try Oyster Pot Pie.
This recipe is the result of some internet searching.

Ingredients: |
1 2 pints oysters, with juice
4 medium potatoes, diced
1 medium onion, chopped
2 stalks celery, chopped
2 carrots, chopped

3 tablespoons butter, divided use
2 teaspoons flour
salt and pepper, to taste
2 cups white sauce
1 pie crust

Procedures: |
Preheat oven to 450 degrees F.
Sauté onion, celery, carrots and potatoes in 2 tablespoons butter until soft, about 5 minutes, and add flour, salt and pepper.
Add white sauce to the veggies.
Simmer oysters gently in oyster liquor until edges curl, about 1 minute.
Layer veggies, then oysters, then veggies and then cover with the crust.
Dot top with remaining 1 tablespoon butter.
Bake at 450o for 10 minutes.
Reduce heat to 350o and bake for an additional 45 minutes, or until crust is golden brown.

Notes: |
2011-07-10: We doubled the oysters. We'll try putting the oyster liquor in the sauce. Unfortunatly, this includes $36 of oysters and that's a bit "rich."
2011-06-27: We gave this its first try and it was very good. It needs to be thicker and needs more oysters.
