PORK SPARE RIBS - MEMPHIS

Ingredients: |
Several pounds Pork Spare Ribs, cut into 3-4 rib sections
1/4 Cup Lemon Pepper
1/4 Cup Garlic Powder
1/4 Cup Adobo Powder
1 T Salt
1 T Pepper

Procedures: |
Score the fell on the back of the rib sections.
Cut into 3-4 rib sections.
Combine the spices and rub liberally into both side of the meat.
Refrigerate overnight.
Pre-heat to 250o.
Place rib sections upright in a roasting pan.
Add water to the bottom of the pan.
Seal the pan with aluminum foil and back for 4-5 hours.
Cool.
Re-season the rib sections and bake, uncovered in a 250o oven.

Notes: |
2010-12-10: We used country-style boneless ribs.
2009-04-07: Excellent. They cooked 4 hours at 275o. Lower and slower, next time.
