Chinese Style Fried Pork Chops
1/2 pork tenderloin single
2 tablespoon soy sauce
1 tablespoon rice wine
2 teaspoons sugar
1/2 teaspoon salt
1 dash pepper or 1 dash five-spice powder
1 teaspoon minced garlic
1 egg
6 tablespoons cornstarch
oil ( for frying)
1. Cut the 1/2 pork tenderlin into 4 pieces and pound to 1/2" thickness.
2. Mix together all the ingredients except cornstarch and oil and pour over pork. Marinate for an hour.
3. Just before frying, pour cornstarch on top of pork and stir into marinade.
4. Heat enough oil in a large skillet to cover bottom. Place pork in pan when oil begins to shimmer. Cook pork chops over med-high heat until cooked through.
2018-06-29: Half of a pork tenderloin single was cut into four pieces and pounded. The 1 tablespoon of garlic was too much. Perhaps a little more soy. Marinate for an hour. Served with 4 bean salad.
2017-07-16: We didn't use the marinade, but decided, after dinner, that the cornstarch should haven added to the marinade, which should have been returned to the pan after the pork was removed to be heated and thickened. The pork "chops" were tender and flavorful.
