Chinese Style Fried Pork Medaliions

Ingredients:
1/2 pork tenderloin single
2 tablespoon soy sauce
1 tablespoon rice wine
2 teaspoons sugar
1/2 teaspoon salt
1 dash pepper or 1 dash five-spice powder
1 teaspoon minced garlic
1 egg
6 tablespoons cornstarch
oil ( for frying)
Procedures:
1. Cut the 1/2 pork tenderlin into 4 pieces and pound to 1/2" thickness.
2. Mix together all the ingredients except cornstarch and oil and pour over pork. Marinate for an hour.
3. Just before frying, pour cornstarch on top of pork and stir into marinade.
4. Heat enough oil in a large skillet to cover bottom. Place pork in pan when oil begins to shimmer. Cook pork chops over med-high heat until cooked through.
Notes:
2021-06-14: very good.
2020-04-30: We used the entire tenderloin single cut into 8 pieces, doubling the rest of the ingredients, except the egg. The cornstarch was put in a separate bowl and the pork pieces were dipped before frying. Served with couscous and leftover Brussels’ Sprouts.
2019-07-20: For the two of us, served with 4 bean salad.
2018-06-29: Half of a pork tenderloin single was cut into four pieces and pounded. The 1 tablespoon of garlic was too much. Perhaps a little more soy. Marinate for an hour. Served with 4 bean salad.
