Pork Tenderloin Cranberry
Ingredients:
1/2 pork tenderloin single
2 (16 ounce) cans jellied cranberry sauce
1/2 cup white sugar
1/2 cup cranberry juice
1 teaspoon mustard powder
1/4 teaspoon ground cloves
salt to taste
1 can cranberry sauce
1 t BTB Beef
1 t minced garlic
1 t mustard
1/4 cup red wine
1 T balsamic vinegar
Dash red pepper flakes
Procedures:
These procedures are new and untried
Place pork roast in a large, roasting pan.
Cook at 350o to 150o for medium; about an hour(?).
Let stand for 10 minutes before slicing.
Serve with reduced sauce.
Notes:
2023-10-14: Roasted dry and served with reduced sauce, garlic mashed potatoes andstring beans and almonds
2022-10-15: We used marinade left over from the previous effort. We discarded the marinade and cooked, dry, to 145. Served with spaghetti squash; mozzarella-cranberry salad, and a bottle of Riesling.
2021-01-25: A great first attempt, needed salt before/after roasting. Served with a mozzarella/Campari tomato/basil/ balsamic salad and a bottle of 19 Crimes Red Blend. Alternative sides include a cheesy potato dish. Although the tenderloin was marinated for a hour, it should be roasted dry, not “poached” and served with the marinade after it has been reduced.
