Honey Glazed Pork Tenderloin

Ingredients:
1/4 cup honey, plus more for drizzling
1/4 cup sherry vinegar
1 tablespoon whole-grain Dijon mustard
1/4 teaspoon ground cayenne pepper
1 (1- to 1 1/2-pound) pork tenderloin
1 teaspoon kosher salt, plus more as needed
3/4 teaspoon freshly ground black pepper, plus more as needed
1 tablespoon butter
1 tablespoon oil
Procedures:
Mariknate the meat overnight. Move it to the roasting pan, reserving the marinade. Roast at 400o to 140o. Heat the marinade until thickened. Cut the pork crosswise into slices and add the marinade.
Notes:
2025-07-12: Served with ears of corn, fruit salad and a bottle of Cabernet Sauvignon.
2020-12-04: This worked very well but was rather involved. Next time we will marinate the pork first and then cook it in the oven to 145, as it was a little too rare.
