PESTO-CRUSTED ORANGE ROUGHY

Ingredients: |
2 Tablespoons Pesto
1/2 cup fine dry breadcrumbs
1/4 teaspoon pepper
4 (4 ounce) orange roughy fillets

Procedures: |
Combine pesto, breadcrumbs, and pepper in in a shallow dish. Dredge fillets in breadcrumb mixture, place in an 11 x 7 baking dish coated with cooking spray. Coat
fillets with cooking spray. Bake at 400o for 15 minutes or until fish flakes with a fork
