PEACHY PORK PICANTE  
This first came from Southern Living Complete Quick and Easy Cookbook: 2009
Ingredients:
1 pound boneless pork, cubed
1 pack taco seasoning mix
1 tablespoon vegetable oil
1/4 cup peach preserves
8 oz mild salsa
Hot Cooked Rice
Procedures:
Place pork in a large zip-top plastic freezer bag; add taco seasoning. Seal bag and shake to coat pork.
Heat oil in a large skillet over medium-high heat. Add pork, cook, stirring constantly, until browned on all sides.
Stir in preserves and salsa; cover, reduce heat, and simmer 15 minutes, stirring occasionally.
Notes:
2013-08-17: Excellent 1st attempt. Next time we'll add onions and red/yellow peppers, sautéed in oil before cooking the pork. We'll make this for SKDL
