PEPPER SHRIMP WITH RICE
 
Ingredients:
2 lbsShrimp, Large
3/4 CupBoiled Rice
16 oz.Canned Black Beans, drained
4 oz.Canned Chilis, mild, chopped
4 oz.Canned Pimentos, drained and chopped
1/4 CupFresh Parsley
1/4 tRed Pepper Flakes
3 TButter
Procedures:
Prepare shrimp for broiling.
Cook the rice using 1.75 Cups water, and salt and pepper.
Stir in beans, chilies and pimentos.
Add 3 T minced parsley.
Heat through.
Mix butter, ground pepper and 1 T parsley.
Arrange shrimp on broiler pan.
Brush shrimp with butter mix.
Place at closest setting and broil for 3 to 4 minutes basting with more sauce.
Put rice and shrimp on platter; pour any drippings over and serve.
