PEPPER SHRIMP WITH RICE

| Ingredients: |
| 2 lbs | Shrimp, Large |
| 3/4 Cup | Boiled Rice |
| 16 oz. | Canned Black Beans, drained |
| 4 oz. | Canned Chilis, mild, chopped |
| 4 oz. | Canned Pimentos, drained and chopped |
| 1/4 Cup | Fresh Parsley |
| 1/4 t | Red Pepper Flakes |
| 3 T | Butter |

| Procedures: |
Prepare shrimp for broiling.
Cook the rice using 1.75 Cups water, and salt and pepper.
Stir in beans, chilies and pimentos.
Add 3 T minced parsley.
Heat through.
Mix butter, ground pepper and 1 T parsley.
Arrange shrimp on broiler pan.
Brush shrimp with butter mix.
Place at closest setting and broil for 3 to 4 minutes basting with more sauce.
Put rice and shrimp on platter; pour any drippings over and serve.
