A favorite in the Welsh Kitchen. |

Ingredients: |
1 T Olive Oil
2 T Butter
1/2 cup chopped shallots
1/3 cup beef stock
1/4 cup Brandy or Cognac
|
1 T Dijon Mustard
2 t fresh lemon juice
1 t Worcestershire
2-3 Filet Mignons!

Procedures: |
Slice the steaks as thin as possible; the thinner the better.
Melt the butter and add the Olive Oil.
Sauté the shallots until softened.
Add the beef stock, mustard, Worcestershire and Lemon Juice and boil for 1-2 minutes.
Add the brandy/cognac and set the mixture afire.
Reduce heat.
Add the steaks to the pan and simmer until done.
Serve, pouring the sauce over the steaks!

2013-01-12: For three of us, served with spghetti squash, holiday potatoes and sweet potato casserole.
2012-09-28: An excellent entree, made from Filet Mignon.
2011-12-09: We used pieces we had previously trimmed from a whole tenderloin and it worked well.
