Ingredients: |
2-3 rib; ~4-5 lbs rib roast from the small end
McCormick Prime Rib Spices

I like to get a 2-3 rib roast from the small end.
I ask the butcher to cut the bone off and tie the bone back on.
A good size for a 4 person dinner party is about 4-5 lbs.
Remove Roast from the refrigerator about 1 hour in advance and rub with McCormick's Prime Rib Spices.
You can use any good steak seasoning as desired if McCormick's is not available.
Be sure to season on all sides.
Pre-heat oven to 475.
Place roast uncovered bone side down in the oven for 5 minutes per pound.
For example, if 5 lbs cook at 475 for 25 minutes
After the high temp cooking is completed, change the oven temp to 275 and cook roast until the internal temp reaches 130-135 for medium rare.
Should take 2 hours more following the high heat cooking.
After removing from the oven, let the roast rest for 15 minutes before carving.
Note the temp will rise by about 5 degrees in the resting period.
I usually make au jus from a mix to accompany and also serve with horseradish.
Enjoy
The small end is more tender and less fatty than the large end of the roast.
