Rib Eye Steaks |

Ingredients: |
2 boneless rib eye steaks, each about 12 ounces and 1 inch thick, trimmed of excess fat
1 tablespoon extra-virgin olive oil
Adobo Seasoning
Salt
Freshly ground black pepper

Procedures: |
Allow the steaks to stand at room temperature for 15 to 20 minutes before starting.
Preheat the oven to 350°.
Sear the steaks over medium high heat in an oven-safe skillet for about 1 minute per side.
Insert a meat thermometer set for 145o.
Roast in the oven until done.
Remove and let rest for 3 to 5 minutes.

Notes: |
2018-08-18: two large ribeye steaks were pan- seared and then put in the oven at 3:50 to 145o.
It was too much for the two of us so we split one and kept the other for later.
