Salmon Salad

Ingredients:
2 cups cooked, flaked salmon
2 hard-boiled eggs, crushed
1/2 cup red bell pepper, diced
1/2 cup chopped onions
1/4 cup chopped celery
dash of dill
4 to 5 tablespoons mayonnaise, or enough to moisten
1/4 teaspoon cayenne pepper
Salt and pepper
1 Tablespoon lemon juice
Procedures:
In a large bowl, gently toss together the salmon and crushed hard-boiled eggs. In another bowl, combine bell pepper, onion, celery, and mayonnaise. Add seasonings and stir to combine. Pour mixture over salmon, add lemon juice, and toss lightly to combine. Chill a few hours. Serve over lettuce.
Notes:
2022-05-07: Served with a V8 tomato aspic.
2020-05-30: Made from the leftover from the previous night’s pan-seared salmon.
2019-08-13: a simple version sans eggs & pepper.
2019-05-25: excellent; served with club crackers
