SCALLOP STIR-FRY FOR DIABETICS

We are trying to reduce carbs, so we created this on the fly. |
|
Ingredients: |
1 pound scallops, halved
1 stick butter
1/2 onion diced
1 tablespoon minced garlic
1/2 cup diced prosciutto
1/4 cup spinach leaves
dash dill weed
dash Cayenne Pepper
1/4 cup Freshly Grated Parmesan cheese

Procedures: |
Sauté the onions in the melted butter.
Add and sauté the garlic and prosciutto
Add the spices
Add the spinach leaves and wilt
Plate over additional spinach leaves, if desired
Top with Parmesan cheese.

2011-01-26: We had this ala carte. It could be plated over a starch such as rice, pasta, or a fully cooked baked potato, but we are trying to reduce carbs.
