SCALLOP SCAMPI
Ingredients:
2 lbs Scallops
1 onion, chopped
1 stick Unsalted Butter
3-4 Cloves Fresh Garlic, minced
Red Pepper Flakes
Dill
Lemon Juice
Procedures:
Melt the butter in a large skillet and add the onion. Sauté the onion until translucent.
Add the scallops and sauté, turning, until bright pink.
When the scallops are cooked to the desired doneness, add the red pepper flakes, and garlic.
Sauté, briefly, to not burn the garlic.
Add the dill and lemon juice, toss well and serve.
Notes:
2022-11-27: Served with cappalini and Elaine’s’ tomatoes.
2021-10-29: An excellent batch; important to lightly brown the scallops.
2019-09-20: A disappointing batch served with equally disappointing Brussel’s Sprouts.
2019-02-08: I quartered a pound of sea scallops, but the 5 cloves of garlic was too much.
