Panko Shrimp
We adapted this crunchy shrimp recipe from a Disneyland version.
Ingredients:
5-6 Large shrimp, per person, peeled, deveined, tails off
1 cup 1/2 & 1/2
1/2 cup All-purpose flour
2 eggs, beaten
3 cups Japanese panko bread crumbs
Salt & pepper to taste
Cayenne Pepper to taste
Canola or peanut oil
Procedures:
Marinate the shrimp in the 1/2 & 1/2 overnight
Put sufficient oil into a frying pan so the shrimp will be covered.
Combine panko bread crumbs, salt, pepper, flour and cayenne.
Dip each shrimp in the beaten egg.
Coat with bread crumb and flour mixture.
Fry the shrimp, a few at a time, for 2-3 minutes.
Notes:
2024-05-19: Lyd used cracker meal instead of panko, and soaked the shrimp in 1/2 & 1/2 overnight, served with asparagus tempura and summer salad and a bottle of Dr. Loosen Riesling.
2020-02-23: 18 shrimp were fried and served with red cabbage slaw.
2018-12-12: 16 shrimp fried golden brown and served with cocktail sauce and buttered broccoli.
2018-01-12: 10 shrimp served with steamed broccoli and a Romaine split.
2006-11-18: Added to our cookbook.
