Shrimp Sous Vide
Any prep you choose.
Prep the shrimp how ever you choose and set the Sous Vide bath to the desired temperature.
Express all air from the bag and submerge in the sous vide bath
Cook from 15 minutes to an hour.
Cooking Temperature
125o: Translucent, semi-raw with a soft, buttery texture.
130o: Nearly opaque, very tender with a hint of firmness.
135o: Barely opaque, moist, juicy, and tender.
140o: Traditional poached texture with good bounce and a crisp, juicy bite.
2018-03-29: cooked in the same water with the lamb shanks at 143. The consistency was good, but the seasonings need work.
