Tortellini Carbonara TortelliniCarbonara
This first came from Southern Living Complete Quick and Easy Cookbook: 2009
Ingredients:
1 9oz package refrigerated cheese-filled tortellini
4 bacon slices
1 tablespoon garlic
1/3 cup shredded Parmesan cheese
1/2 cup whipping cream
1 T Parsley
1/4 t freshly ground pepper
Procedures:
  1. Cook the bacon in the same pan until crisp; remove and drain on paper towels; crumble.
  2. Cook garlic in reserved bacon drippings for 30 seconds.
  3. Cook the tortellini according to package directions, drain and set aside.
  4. Return the tortellini to the pan. Add the bacon, Parmesan cheese and remaining three ingredients, tossing gently.
  5. Serve immediately.
Notes:
2023-11-12: with a Waldorf Salad.
2021-03-10: Using a sausage-based tortellini we served it with Campari Tomatoes and Catalina dressing.
2018-12-19: a good batch with spaghetti squash.
2018-02-21: a very tasty batch with Rana tortellini.
