TUSCAN STUFFED TENDERLOIN

Ingredients: |
1 onion diced
2 Tablespoon olive oil
1/2 lb fresh spinach
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 Cup ground parmesan
3T drained, chopped dried tomatoes in olive oil
1 4 Lb beef tenderloin roast

Procedures: |
Sauté onion in olive oil. Add spinach, s and p. Sauté 1 min. Cool. Stir in cheese and tomatoes.
Cut meat lengthwise 3/4 through.
Open to lay flat.
Spoon spinach mix into center.
Fold meat over mixture.
Tie with kitchen string at 2 inch intervals.
Chill, or place cut side up in roasting pan.
Cover with Al foil.
Roast at 425o for 50 minutes, or until thermometer reads desired doneness, 145o for medium rare.
Cool before slicing rather thickly.
