White Beans and Pepperoni
This comes from the Red Book, a notebook of our recipes created in 1999, and only recently resurrected. Therefore, many of the recipes are listed as experimental.
Ingredients:
1 garlic clove
2 Tablespoons EVOO
1 onion, chopped
1 package pepperoni, chopped
1 can Italian tomatoes, chopped, with juice
1 teaspoon basil
1 jar roasted peppers
1/2 teaspoon oregeno
dash cayenne pepper
2 cans navy beans, rinsed and drained
tubular pasta
Grated Parmesan
Procedures:
Cook pasta, al dente and drain well.
Cook the garlic in oil until golden and then discard the garlic.
Add onion, pepperoni and cook 3 minutes.
Add tomato, basil, oregano, peppers, cayenne pepper, salt and pepper.
Simmer 5 minutes.
Add beans and parsley and simmer, partially covered, for 5-7 minutes.
Toss with pasta and sprinkle with Parmesan.
Notes:
2023-03-29: Served with 24 hour salad.
2016-12-17: served as a stand alone dish with 3 quarts for the freezer.
2015-12-08: Dinner for the 2 of us
2014-04-30: The pepperoni was old.
2012-11-12: This worked well, again. We froze some.
